I've fallen off the posting-my-weekly-menu-plan wagon, but I figured I'd climb back on for the week. My menu board has gotten lots of use & I've even added more options in the hope that summer would arrive soon.  Last week, I tried cooking up some frozen brussel sprouts and they were amazing! I steamed them & then made a browned butter sauce with almonds and mixed them together. Delish! Next time, I'm going to try just drizzling them with some infused olive oil.


Sunday: Father's Day Dinner @ Mom & Dad's / cook whole chicken/bake bread
Monday: Leftover Shrimp & rice cooker risotto
Tuesday: frozen dinner (yep, a crazy day that might not have much time to eat dinner)
Wednesday: Homemade panini's (or leftovers - it depends when my friend Joanna arrives in town!)
Thursday: Pizza from the farmer's market
Friday: my birthday! Salmon w/ roasted veggies
Saturday: Beef stir fry
