Weekly Menu

This week is a bit busy & is reflected by the menu!

Monday - Mac n' cheese (tutor night)
Tuesday - Pasta & sauce (haircut & church ladies night out)
Wednesday - pack-a-sandwich dinner (appt after work & then FPU)
Thursday - leftovers (tutor night)
Friday - Scallops with corn & tomato salad
Saturday - leftovers
Sunday - Garlicky Farfalle w/white beans and arugula

Anna, Looks like you have quite a busy week ahead of you! Tuesday night sounds wonderful. Hair cut and a girls night?? You lucky girl, enjoy yourself!! :)

I had to google search farfalle because I had no idea what is was. :) Pasta I see, now I am completely in the know.

My family is coming over right now, they should be here soon. Mike and Mary are coming over this weekend sometime though. I'm not sure which day they are leaving, but will be at our house on Sunday. I'll email you Mary's contact info if you want to get ahold her.

The fish recipe that you emailed me sounds really good. I'm sure that would work with many different kinds of fish too--snapper, halibut, etc... Thanks!

Farfalle is also known as bow-tie pasta. It just sounds fancier.

Do you have a Winco near you? They have 1lb bags of frozen tilapia on sale for $1.98. Although, you still might have fresh fish from your neighbors! The recipe is really easy to either increase or decrease in quantity.

Anna, I was just at WinCo today, how funny! I'll keep that in mind for next time. Right now we have quite a bit of trout. We actually ate some for dinner last night. We've been grilling it, but when my mom was here she cooked some in a skillet and it was great that way too. I don't think I can use it for the recipe just because you cook it with the skin on, and then lift it off of the skin to serve it. Trout also has a layer of bones as well that need to be removed after cooking. I think I'll try the tilapia. I've never had that before. It will be at least another month until I go to WinCo again.

fyi - i think the tilapia @ Winco is just on sale for a short time. I saw it in a sale flier I received in the mail.
