Weekly Menu


I haven't posted my menu in a while so my only comment is that planning ahead does make life a bit easier! One recipe from last week was moved to this week with the hope of finding a butternut squash at the farmers market. I'm officially out of butternut squash! If the squash next year is as successful as last year, I may not be as generous...I'm sad that they are all gone. I'm excited for my menu this week as I am trying out recipes from two new cookbooks! yummy.

Monday: Spice Mushroom & Rice Soup (pg 102 in the new WW Points Plus Cookbook)
Tuesday: Texas Chicken Soup (pg 60 in the new WW Points Plus Cookbook)
Wednesday: Leftovers
Thursday: Thin-sliced beef steak & sweet potato
Friday: Chicken, white bean & butternut squash chili (pg 160 in the new WW Points Plus Cookbook)
Saturday: Leftovers (knitting group night)
Sunday: Italian Sausage & escarole Stew (Pampered Chef Soup, Stews & Chili cookbook)
