Weekly Menu - 5/9/2011

Last week was not fully successful in the menu plan. I just need to accept that my Thursday is not quite complete without the Farmer's market pizza. (I ended up stopping despite having something else on the menu.) You'll also notice that I'm trying to clear out the freezer a bit.

So here is my menu for the week

Monday: Emma's Pumpkin/Butternut Squash Soup from the freezer(Meatless Monday)
Tuesday: Jane's pinto beans & chicken on tostada's
Wednesday:Corned Beef & cabbage (corned beef is from the freezer)
Thursday: Pizza from the farmer's market
Friday: Soy glazed cod & fried rice (from the new WW point's plus cookbook)
Saturday: cook whole chicken
Sunday: Chicken, white bean & butternut squash soup (from the new WW Point's Plus cookbook) (keeps getting postponed but really want to make this as it is delish!)

Meatless Monday, I like that! I see you enjoyed some Pinto Beans last week. We did too, super easy. We did ours with leftover grilled chicken and salsa for topping. And Pizza Thursday, I so wish I could join you--sounds fun!!

Thanks! the pinto beans are amazing... next time I make them, I'm going to set some aside before pureeing them with my blender.
