Weekly Menu


As I was cooking last week, I discovered that my freezer was full! My plan of cooking and then saving a couple of servings for later was successful, perhaps too much. Most of my smaller freezer containers were full of yummy frozen goodness. So this weeks menu is heavy on the frozen & reheated fare. Luckily, it works quite well with my anticipated schedule. I think a couple of you have asked me in person for recipes - I have forgotten what you wanted! So please comment on my posts if you would like a recipe copy.

Monday: Herbed Meatballs & Rice (frozen)
Tuesday: Dinner with a friend (maybe...) if it doesn't work - Middle Eastern chicken (frozen)
Wednesday: Lentil soup w/ yogurt cilantro topping (WW Now & Later cookbook)
Thursday: Quick Pinto Bean Chili (frozen)
Friday: Christmas Even dinner at my parents - Traditional dinner of Oyster Stew & Pizza
Saturday: Christmas dinner ham (yum!) I'm bringing homemade rolls
Sunday: Leftovers
